Instructions

Step 1

Rinse the brown rice in a fine-mesh strainer and drain well. In a large saucepan, combine the brown rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the water has been absorbed.

Step 2

Season the turkey breast with salt, pepper, oregano, cumin, and paprika. In a medium saucepan, heat 1 tablespoon of olive oil over medium-high heat. Sear the turkey breast for 3-4 minutes per side, or until browned and cooked through. Transfer the turkey to a plate and let rest for 5 minutes before slicing.

Step 3

In the same saucepan, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and cook for 3-4 minutes, or until tender. Add the cherry tomatoes and cook for an additional 2 minutes.

Step 4

In a large bowl, combine the cooked brown rice, sliced turkey, bell pepper mixture, olives, feta cheese, parsley, and mint. Drizzle with a squeeze of lemon juice and toss to combine.

Step 5

Serve immediately, garnished with additional parsley and mint if desired.
