Ingredients
- 8 oz ground turkey
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1/2 cup diced zucchini
- 1/2 cup diced onion
- 1 garlic clove, minced
- 1 tsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
- Salt and pepper, to taste
- 1/4 cup low-sodium chicken broth
- 2 tbsp chopped fresh parsley
- Optional: 1/4 cup shredded mozzarella

Instructions
Step 1
Heat the skillet over medium-high and swirl in olive oil.
Step 2
Add the ground turkey, breaking it apart with the spatula. Cook until lightly browned, about 4-5 minutes.
Step 3
Push the turkey to one side and add diced onions, bell peppers, zucchini, and garlic. Sauté for 3-4 minutes until vegetables start to soften.
Step 4
Sprinkle smoked paprika, cumin, salt, and pepper over the mixture. Stir to coat the ingredients evenly.
Step 5
Pour in the chicken broth, then reduce heat to medium-low. Cover and let the flavors meld for 5-7 minutes, stirring occasionally.
Step 6
Remove the lid, sprinkle mozzarella (if using) and fresh parsley, and stir until the cheese melts slightly.
Step 7
Taste and adjust seasoning if needed. Serve immediately.
