
Crockpot Creamy Chicken, Broccoli, and Rice

Ingredients
- 4 boneless, skin‑less chicken breasts (about 6 oz each)
- 1 (10‑oz) can cream of chicken soup
- 1 cup low‑sodium chicken broth
- 1 cup long‑grain white rice
- 2 tablespoons unsalted butter
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 2 cups broccoli florets, trimmed
- Salt and freshly ground black pepper, to taste

Instructions
Step 1
Season the chicken breasts with salt and pepper. If desired, brown them briefly in a skillet with 1 tablespoon of butter, then transfer to the crockpot.
Step 2
Add the cream of chicken soup, chicken broth, rice, thyme, remaining butter, and broccoli to the crockpot. Stir gently to combine.
Step 3
Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the rice is tender and the chicken is cooked through.
Step 4
Taste and adjust seasoning, adding more salt or pepper if needed.
Step 5
Serve hot, optionally garnished with a sprinkle of grated Parmesan or a squeeze of fresh lemon juice for brightness.
