Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 cups cooked rice
  • 8 oz penne pasta
  • 1 cup vegetable medley mix
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 1 can condensed cream of mushroom soup
  • 1 can condensed cream of chicken soup
  • 4 mozzarella cheese sticks
  • 1 cup frozen corn kernels
  • 4 tbsp butter
  • 2 eggs
  • 4 oz kielbasa, sliced
  • 4 tbsp mayonnaise
  • 1 cup lima beans

Instructions

Step 1

Preheat your oven to 375°F (190°C).

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, sauté the kielbasa slices in 2 tbsp of butter until browned. Remove from heat and set aside.

In the same skillet, add the remaining 2 tbsp of butter. Add the chicken and cook until browned, about 5-6 minutes.

In a large mixing bowl, combine the cooked pasta, chicken and vegetable mixture, rice mixture, and cooked kielbasa.

Stir in the frozen corn kernels and lima beans.

Transfer the mixture to a 9x13 inch baking dish. Top with the sliced mozzarella cheese sticks.

Drizzle the mayonnaise over the cheese, then cover the dish with aluminum foil.

Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes, until the cheese is melted and bubbly.
