Large skillet or wokSpatulaMeasuring cups and spoonsWooden spoon

Instructions

Step 1

Prepare the rice according to package instructions using 2 cups of water. Set aside.

Step 2

In a small bowl, whisk together cumin, smoked paprika, salt, and black pepper. Rub the spice mixture evenly onto both chicken breasts.

Step 3

Heat 1 teaspoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 5-6 minutes per side. Transfer the chicken to a plate and set aside.

Step 4

Add the remaining 1 teaspoon of olive oil to the skillet. Add the sliced sweet peppers and cook until they start to soften, about 3-4 minutes.

Step 5

Add the sliced carrots to the skillet and continue cooking until the vegetables are tender-crisp, about 4-5 minutes.

Step 6

Add the frozen mixed vegetables to the skillet and cook until thawed and heated through.

Step 7

Return the cooked chicken to the skillet and stir in soy sauce (if using). Cook for an additional minute to allow the flavors to meld.
